The Gin Fizz

  Ingredients    ■ 2 oz. gin  ■ 1 oz fresh lemon juice  ■ ¾ oz simple syrup (1 part white sugar, 1 part water, boiled and chilled)  ■ 1 egg white (approx .5 oz)  ■ 1 oz club soda  ■ 1 lemon twist for garnish  ■ 1 rocks glass.   Directions   Add the club soda to the rocks glass and set aside.  Add the remaining ingredients to a shaker and shake without ice for about 10 seconds.  Add 3 or 4 ice cubes and shake very well.  Double-strain into the prepared glass.  Garnish with a lemon twist.
